For 4 Servings:
1 pound of boneless, skinless chicken breasts, sliced into strips
2 tablespoons of vegetable oil
1 red bell pepper, seeded and sliced into strips
1 green bell pepper, seeded and sliced into strips
1 yellow onion, sliced into strips
2 cloves of garlic, minced
1 tablespoon of chili powder
1 teaspoon of ground cumin
1/2 teaspoon of smoked paprika
1/4 teaspoon of cayenne pepper (optional)
Salt and pepper to taste
Juice of 1 lime
Chopped fresh cilantro for garnish (optional)
1. In a large bowl, combine the chicken strips, sliced bell peppers, onion, minced garlic, olive oil, chili powder, cumin, smoked paprika, and salt and pepper. Mix well to coat the chicken and vegetables evenly with the spices.
2. Heat a large, heavy-bottomed skillet over medium-high heat on the gas stove. Once hot, add the chicken and vegetables to the skillet.
3. Cook the chicken and vegetables, stirring occasionally, for 8-10 minutes or until the chicken is cooked through and the vegetables are tender and slightly charred.
4. Warm the tortillas according to the package instructions, either in the microwave or in a separate skillet.
5. Serve the fajita mixture hot, with warm tortillas and your desired toppings.
