For 4 Servings:
1 lb fresh okra, washed, dried and sliced
1/2 cup cornmeal
1/4 cup all-purpose flour
Salt and pepper to taste
1/4 teaspoon cayenne pepper or paprika (optional)
Vegetable oil for frying
1. Rinse and dry the okra, trim off the stem ends. Cut the okra into 1/2-inch slices.
2. In a shallow dish, mix together the flour, cornmeal, salt, pepper, and any other desired spices or seasonings.
3. Heat the oil in a large skillet over medium-high heat.
4. Dip the okra in the flour mixture, shaking off any excess.
5. Carefully place the okra in the hot oil and fry for 2-3 minutes on each side, or until golden brown and crispy.
6. Remove with a slotted spoon and drain on a paper towel.
7. Serve the fried okra with your desired dipping sauce, or sprinkle with salt and pepper to taste.
