For 4 Servings:
4 cups of cooked and cooled white rice
1/2 cup of kimchi, chopped
4 strips of bacon, diced
1 small onion, chopped
2 cloves of garlic, minced
1 tablespoon of vegetable oil
1 tablespoon of soy sauce
1 tablespoon of sesame oil
1 tablespoon of gochujang (Korean chili paste)
2 scallions, thinly sliced
Salt and pepper to taste
Fried eggs for serving (optional)
1. In a large wok or frying pan, heat the vegetable oil and sesame oil over medium-high heat. Add the onions and white parts of scallions, and cook until the onions are translucent, about 2-3 minutes.
2. Add the minced garlic and cook for an additional 30 seconds until fragrant.
3. Add the chopped kimchi and fry for 1-2 minutes until slightly browned.
4. Add the cooked rice, soy sauce, kimchi juice, and gochujang (if using), and stir until well combined.
5. Cook for another 2-3 minutes, stirring frequently, until the rice is heated through and slightly crispy.
6. Season the fried rice with salt and pepper to taste.
7. If desired, fry or scramble the eggs in a separate pan.
8. Serve the kimchi fried rice hot, topped with the cooked eggs (if using), sesame seeds, and sliced scallions.
