For 4 Servings:
1 lb boneless and skinless chicken breast, cut into bite-size pieces
2 stalks of lemongrass, bruised and cut into 2-inch pieces
1 can of coconut milk
1 onion, finely diced
2 cloves of garlic, minced
1 inch ginger, minced
2 tablespoons of red curry paste
1 teaspoon of turmeric powder
1 teaspoon of ground cumin
1 teaspoon of ground coriander
Salt and pepper to taste
2 tablespoons of vegetable oil
Fresh cilantro for garnish
1. In a pan, heat 2 tablespoons of vegetable oil over medium heat. Add the diced onion and sauté until translucent.
2. Add the minced garlic and ginger and sauté for 1-2 minutes.
3. Add the red curry paste, turmeric powder, ground cumin, and ground coriander. Stir until well combined.
4. Add the chicken and stir to coat the chicken in the curry mixture.
5. Cook for 5-7 minutes or until the chicken is cooked through.
6. Add the lemongrass and coconut milk. Bring the mixture to a simmer.
7. Reduce the heat to low and let the curry simmer for 15-20 minutes or until the sauce has thickened.
8. Season with salt and pepper to taste.
9. Remove the lemongrass before serving.
10. Garnish with fresh cilantro and serve with rice.
