For 4 Servings:
1 pound mutton, cut into bite-sized pieces
2 tablespoons vegetable oil
1 large onion, chopped
2-3 cloves garlic, minced
1 inch piece of ginger, grated
2-3 green chilies, sliced (optional)
1 tablespoon coriander powder
1 teaspoon cumin powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1 teaspoon garam masala powder
2 medium tomatoes, chopped
1 cup water
Salt, to taste
Fresh cilantro, chopped for garnish
1. Heat vegetable oil in a large pot over medium-high heat. Add onions and sauté until they turn golden brown.
2. Add minced garlic, grated ginger, and sliced green chilies (if using) to the pot. Sauté for another 1-2 minutes until fragrant.
3. Add mutton to the pot and cook until browned on all sides.
4. Add coriander powder, cumin powder, turmeric powder, red chili powder, and garam masala powder to the pot. Mix well and cook for 2-3 minutes until fragrant.
5. Add chopped tomatoes to the pot and cook until they are soft and mashed.
6. Add water and salt to the pot. Bring to a boil, then reduce heat to low and let it simmer for 30-40 minutes, or until the mutton is tender and the curry has thickened.
7. Garnish with fresh cilantro and serve hot with rice or naan.
