For 4 Servings:
1 tablespoon butter or oil
1 onion, diced
1 cup long-grain white rice
2 cups chicken or vegetable broth
Salt and pepper to taste
½ teaspoon ground cumin or other spices (optional)
½ cup diced vegetables (optional)
½ cup chopped nuts or raisins (optional)
Fresh parsley or cilantro for garnish (optional)
1. Heat the oil or butter in a medium saucepan over medium heat. Add the onion and sauté for about 5 minutes until softened.
2. Add the rice to the saucepan and stir to coat in the oil or butter.
3. Cook for 1-2 minutes, or until the rice is lightly toasted.
4. Add the broth or water, salt, and any other desired spices or seasonings to the saucepan.
5. Bring to a boil, then reduce the heat to low.
6. Cover the saucepan with a tight-fitting lid and simmer for 18-20 minutes, or until the liquid is absorbed and the rice is tender.
7. Remove the saucepan from the heat and let it sit, covered, for 5 minutes.
8. Fluff the rice with a fork and transfer it to a serving dish. Garnish with chopped parsley or cilantro, or other desired toppings.
