For 4 Servings:
2 tablespoons oil or ghee
1 onion, finely diced
2 cloves of garlic, minced
1 inch ginger, grated
2 tablespoons tomato puree (optional)
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon garam masala
Salt to taste
2 cups of fresh spinach, washed and chopped
1 cup of heavy cream or full-fat coconut milk
1 cup of paneer cheese, cubed
Lemon juice or vinegar (optional)

Fresh cilantro or parsley for garnish (optional)
1. Rinse and chop the spinach and wash it well.
2. Heat oil in a pan on medium heat, and add cumin seeds, ginger, garlic, and green chilies. Saute for a minute.
3. Add chopped spinach and stir it. Cook it for a few minutes until it wilts.
4. Once the spinach is cooked, add salt, coriander powder, cumin powder, and red chili powder and mix well.
5. Let the spinach cook for about 5 minutes or until the oil starts to separate.
6. Add cubed paneer and stir gently. Let it cook for about 2-3 minutes.
7. Add heavy cream and mix it well. Let it cook for a minute or two.
8. Turn off the heat, and garnish with chopped cilantro.
9. Serve the saag paneer with rice, naan or roti.
